A few weeks ago my Mom was cooking in bulk (because don’t you cook for 20 people when only 2 live in your house) and sent supper our way. This is one of the perks of moving back home. I get delicious home cooking regularly. I decided to repay the favor by cooking ribs for them a few nights later. Mom had the great idea, lets start a dinner club! She will make dinner on either Monday or Tuesday and I will make dinner on either Wednesday or Thursday. Yes! After all, if you are already making something for dinner, what is a little more right? And, the lady that keeps my daughter on Wednesdays while I work usually prepares the meals if I give her the recipes. Score!
So what are we having this week? Chicken tikka masala. You can find the recipe here. This is one of my favorite crock pot recipes. I miss the Indian food place that was close to our house when we lived in Dallas. This is the closest thing to Indian food I get now. It is great on a cold day as well. Comfort food! I usually make it with coconut milk, but made it with heavy whipping cream today. If you make it with coconut milk, it ends up seeming a little spicier. Next time I make it with cream I will increase the amount of cayenne pepper. I like mine to kick a little on the way down.
I also made some brown basmati rice to go with it that I bought in bulk at Winco. I’m still need to research whether buying in bulk there actually came out any cheaper, but it seems like it did. A side salad and some angel food cake with berries for dessert and we had a balanced meal. Ok, so we didn’t really need the angel food cake. But it was sooooo yummy.
